About the job – Post Doctoral Fellow – Sensory & Food Product Design – ITC Limited Bengaluru Karnataka India

Responsibilities

  • Project plan factoring in SMART deliverables
  • Execution of plan, troubleshooting
  • Clear and detailed documentation of work

Collaboration with internal cross functional teams as well as with external vendors

Requirements Qualifications


PhD in the area of food engineering/chemical/mechanical

Post doc or related work experience of 0-2 years

Work Experience

  • Studies on textural, tribological & structural properties of various food products
  • Interaction of raw materials and ingredients

Food product design

  • Basics of sensory evaluation
  • Understanding of food structural-instrumental-sensorial relationships
  • Hands-on experience of developing relationship between food composition, texture/structural/tribological and sensory attributes

Food prototyping

Skills

  • Design of experiments
  • Process optimization for texture studies (both product specific and product agnostic as applicable)
  • Identifying gaps through experimentation (rheology, tribology, texture analysis etc.)

Mapping approaches for problem solving

  • Sensory evaluation design for mapping perception to attributes

Knowledge

  • Physicochemical properties of food ingredients
  • Food matrix interaction
  • Scale up engineering process, Basic knowledge of food regulatory laws
